Stink beans, ‘Sataw’ in Thai, are the seeds of a tree, member of the fabaceae family also known as legumes. The seeds are carried in large green clusters of pods.
The flavor is distinct with bitter notes and fragrance reminiscent of the artificial scent added to the otherwise odorless propane and butane gas. Quite distinct, but acquired and addictive.

The use of stink beans is common in the southern Thai cuisine, where the seeds removed from the pods are eaten raw, roasted or cooked in curry dishes and stir-fries, such as ‘Pad Sataw‘.
