The famous tropical fruit, originated from the Indian subcontinent with about a thousand cultivars worldwide, is incredibly popular in Thailand and can be found everywhere. Mango ‘Mamuang’ in Thai is consumed as a fresh fruit when ripe and also very popular in desserts such as mango and sticky rice.

The more interesting and not less common way of using mango, is in its unripe state also known as green mango. Green mangoes especially sour varieties are used extensively in cooking, mainly in salads and as side fresh vegetables accompanying savory dishes.

Sour or sweet varieties of green mangoes are also consumed as a snack sometimes accompanied with ‘Nam Prik Gapi’ a shrimp relish. I personally prefer the sour variety which is very refreshing in hot muggy whether.
