Culinary use

Yanang leaves are used especially in Isan and Lao cuisines, where the leaves’ green extract known as ‘Nam Yanang’ น้ำย่านาง is added to curries such as แกงหน่อไม้ a soupy bamboo curry. The extract imparts a distinguished green color and a grassy flavor but also serves as a thickening agent due to the Yanang solution’s inherent jelly-like viscosity. Yanang’s natural jellying is used for the preparation of refreshing grassy jellies often served with ice, coconut milk sugar, or condensed milk.
