Gingers are full of surprises. Torch ginger ‘Dahla’ in Thai is among the tallest plants in this family and can reach a height of 20ft. It is also a desired ornamental plant with a strikingly beautiful red, pink or whitish flower, used in decorative arrangements.
A lesser known fact is that the torch ginger sometimes called ginger lily is also an exotic food ingredient, a quite rarely used one though. The flowers are shredded or petals plucked and used in salads, curries, stir-fries, deserts and even drinks. The flavor has sweet and mildly spicy notes. It is also known for its medicinal properties as a potent antioxidant and antibacterial plant.
