‘Yum Chompu’ ยำชมพู่ a fresh crunchy and satisfying salad of Wax apples also know as Java apples or ‘Chompu’ in Thai.

Pork and shrimp which are present in the original salad are omitted, giving way to the wax apple, the real star this salad is named after.

The dressing is a simple combination of light soy or fish sauce for pescatarians, sugar, and lime. It should taste salty, sweet, and sour just to balance the saltiness and sweetness.

Ingredients and preparations

Center bowl:

Dressing:

  • Light soy sauce 2.5 tbs
  • Coconut sugar 2 tbs
  • Lime juice 1.5 tbs

Aromatics and garnishes:

  • Fried shallots
  • Fried garlic
  • Fried or roasted unsalted peanuts
Method

1.Deep fry shallots, garlic, and peanuts and set aside on a paper towel to let cool and oil drain.

2.Cut the Wax apples lengthwise twice, then cut the wedges crosswise into bite-size pieces.

3.Mix the dressing ingredients In a bowl or a mortar mix until palm sugar until the palm sugar completely dissolves in the soy or fish sauce and lime liquids.

4.Mix the Wax apples with the dressing, garnish with the fried shallots, garlic and peanuts and serve.
