‘Khao Niaw Turian’ ข้าวเหนียวทุเรียน a dessert of sticky rice and durian, is a sweet and comforting finish for Thai meals. The sticky rice is soaked in pandan scented sweet coconut milk. Pieces of durian are soaked as well in warm scented coconut milk infusing the milk with durian aroma.

A pile of soaked sticky rice is placed in a serving bowl, then paired with durian pieces and flooded with lukewarm pandan and durian coconut milk sauce.

Ingredients and preparations

Serving bowl:

  • Durian pieces
  • 1.5 cup, cooked sticky rice

Sauce:

  • 2.5 cups, coconut milk
  • 2 tablespoons, coconut sugar
  • Pandan leaf
  • 0.5 teaspoon, sea salt

Aromatics and garnishes:

  • Roasted coconut flakes (optional)
  • Mint leaves (optional)
Method

1.Prepare in advance sticky rice and roast coconut flakes.

2.Pour the coconut milk to a pot, add a pandan leaf, coconut sugar and a pinch of salt. Bring the sauce to a gentle boil and turn off the heat.

3.Pour about a cup of the warm sauce onto the sticky rice and let sit. The rice will absorb the coconut milk and would become more creamy. Place the durian pieces in the pot to soak in the warm sauce left.

4.Scoop a ball of sticky rice and place it in a serving bowl. Augment with durian pieces and pour sauce from the pot over the rice and durian. Garnish with roasted coconut and mint.
